TASTING :
Pale yellow with green highlights.
Initial vanilla nose, followed by notes of mango, acacia flowers and beeswax; nuances coated with a light toastiness.
These aromas are repeated on the palate, with the added bonus of a beautiful intensity, a balance that combines freshness, length on the palate and aromatic finesse.
BOARD
Serve between 8° and 10°C.
Goes well with aperitifs, foie gras, tarts Tatin, pears and apples.
All chocolate cakes. Shelf life 18 to 24 months.

VINIFICATION :
Harvested with a sugar potential of 15 to 16 degrees, depending on the year. The grapes are transported to our winery in closed tanks. This is where pellicular maceration begins, and pressing is carried out using a pneumatic press.
Fermentation takes place at a low temperature of 14 to 18 degrees Celsius.
This is only interrupted by the cold when the balance between alcohol and sugar has been achieved (35 to 43 g of residual sugar).
For 4 to 5 months, the wine remains in contact with its fine lees to develop its aromatic notes.
