VINIFICATION :
At the beginning of September, we harvest and vinify our wines by grape variety.
Sauvignon Colombard Chardonnay.
Following a tasting, a cuvée is selected for our Traditional Method.
This wine is then bottled and, with the help of new yeast, naturally foams, giving it its sparkle and fine bubbles. After 9 months of bottle ageing, we can start tasting our method.
Serve between 8°C and 10°C max.
